All the islands are ideal for hiking and the scenery is beautiful and impressive.
In general, the south side of the island very sterile, but as you can step farther north to the central island will be very hot at the height of the day to prepare your trip well.
Northern islands are usually very abundant and some islands have banana plantations.

If you miss Teide Tenerife, Barranco del Infierno and the Anaga mountains.

One of the smaller islands, La Gomera, El Hierro and La Palma is in order. The first is easier to achieve and would be my choice. http://www.canary-travel.com
